Honey Ginger Salmon and Cherry Tomato Pasta [Subtle Swap]

Got a romantic dinner coming up? Want it to impress your date but also not put you over your daily calorie limit? I introduce you to one of my go-to meals for the last few months. The salmon gives you great protein and with this low sodium, low cal marinade, it’s a clean diet staple.

The pasta may be a bit harder to convince you about, but the sauce is low calorie and light. You won’t feel bad after eating it, instead you may feel accomplishment for pulling off something so impressive. But the kicker? It’s easy and comes together in under an hour.

  • Carbs – 69 g
  • Fiber – 4g 
  • Fats – 29 g (only 7 g saturated fat)

Ingredients

Honey Ginger Salmon

  • 2 frozen salmon filets
  • 2 tbsp soy sauce, low sodium
  • 2 tbsp honey
  • 1 tbsp garlic powder
  • 1 tbsp ground ginger

Cherry Tomato Pasta

  • 2 tbsp extra virgin olive oil
  • 1 head of garlic
  • 5-10 leaves of basil
  • 1 cup cherry tomatoes (grape tomatoes work well too)
  • 8 oz linguine
  •  cup parmesan

Instructions

  1. Add defrosted salmon filets to a ziplock bag along with soy sauce, honey, garlic powder and ginger. Get as much air out as possible, close and shake. Set aside for now and set a timer for 30 minutes. Preheat the oven to 425 degrees F and bake salmon on an oiled sheet pan for 20 minutes.
  2. Add salt to a large pot and fill with 4 quarts of water. Heat to a boil and add linguine. Follow directions on pasta box
  3. Peel and dice garlic. Cut basil into ribbons
  4. Add olive oil to a pan and heat on medium heat. When heated, add cherry tomatoes. Cook for 3-4 minutes until the skins of the tomatoes start to separate.
  5. Smash tomatoes with the back of a wooden spoon. Add garlic and basil. Cook for an additional 2 minutes
  6. By this time, your pasta should be done. Drain and reserve 1 cup of pasta water. Taste tomato sauce for salt and pepper; add as desired. 
  7. Lower heat to lowest setting. Add linguine, parmesan, and pasta water to the pan with the sauce and stir/toss over heat until pasta is well combined. Serve immediately with salmon.
